◆Josen boasts the top share of any sake in Wakayama. A +1 sake meter value results in a slightly sweet taste, however, heating does not cause it to become heavy but results in a refreshing palate. The previous chief brewer preferred drinking this variety at room temperature. Although this sake is delicious at any temperature, it does not become bitter even when warmed to very hot temperatures.

◆Chokyu Josen is not rich in umami, rather it has a smooth bitterness with a refreshing finish, so it pairs perfectly with any type of food. In autumn, try it on the rocks with grilled fish such as saury. In winter, this is the one and only hot sake to pair with hot pot dishes with a body and finish that one never grows tired of, making it perfect whether chilled or warm.
